    Hello!

Welcome Joe. You have come to the right place. Post your recipe (more accurately a process) first and folks will gladly offer advice.

    Is anyone growing Sabrevois ?

Yeah that stuff is liquid. Better to get some manure pack with straw bedding from the neighbors heifer barn. At least that stuff can be shoveled.

    Is anyone growing Sabrevois ?

I suppose if I top dress then cover with mulch the worms will eventually bring it down the roots. I’m going to have to fence the chickens though. There is no mulch those birds will leave in-place.

    Tart Cherries?

Thanks. I’ll probably cut it with water by 50% and do some bench trials. I have about 12 gallons to bottle. I’ll split the batch because I like off dry and my SIL likes her wine syrupy sweet 😖

    Tart Cherries?

Is this product clear or does it have solids? I was wondering if it could be used prior to bottling my cherry wine (made from fresh cherries) to enhance the flavor.

    The logic is tight! 😂

    Stuck Fermentation?

Agreed. 1.004 is close enough that it may be done. I would transfer to a carboy and add an airlock. It may drop a bit over time… or not.

    Alcohol vs. Cancer

It’s comforting to remember them and think… maybe I’ll be there too. Nobody remembers the vegetarian, non smoker, non drinker who runs 4 miles a day and dies of a massive heart attack at 48… I know one of those too!

Winemaking Workshop with Daniel Pambianchi - Feb 1st - 2025

I wish it was closer. Still I am very tempted to take a road trip. ETA @Vern @wood1954 @Rice_Guy Oh hell, I can’t pass it up. Any chance for a little wine tasting the night before or after the workshop? I plan on coming down the night before or staying the night of… don’t like driving both...

    Show Us Your Pets

Copper (almost two) and Coco (8 months) decided to go on an adventure yesterday. At 3:30pm they went missing. After an hour we were getting pretty panicky and my wife posted a missing dog alert to FB. There was one sighting of them, still traveling together, about 1.8 miles from our place at...

    Alcohol vs. Cancer

The mathematically challenged would argue that would raise the risk to 30%. 🤦‍♂️

    Risking carboy failure?

Consider that if the carboy breaks the glass will likely puncture the bag… how about a bucket or appropriately sized tote? I haven’t seen many totes that are heavy enough that you could lift them with a full carboy inside, but they could serve as a spill control basin.

    Alcohol vs. Cancer

Don’t get worked up over these types of reports. The “wine causes cancer” reports are just as click-baity as the “wine is good for you” headlines. Of course alcohol is bad for you! Most everything we enjoy is bad for us! If I wanted to maximize the days I spend on this planet I would eat a...

Used bourbon barrel - update and question

Interesting. Do they use it to mimic barrel aging, or some other reason? I could see using it to purify your water if using a municipal or questionable groundwater supply.

Used bourbon barrel - update and question

I was thinking perhaps RO could mimic the concentration aspect, but then again, if it were a viable way to speed the process the commercial wineries would probably be doing it. RO is used in maple syrup production to concentrate sugars… I wonder what constituents of wine would be removed with...

I want to make great apple wine.

I replied in more detail on another thread, but if you ferment chopped apples be ready for lots of lees. And apples are fairly dry, so you need lots of them.

Apple varieties for wine and cider

to maintain maximum apple flavor I chop and macerate my apples during fermentation. I started out adding water but now I use just enough apple juice so the must can be stirred with a paddle (I typically have a 30 gallon brute 2/3 full). Doing it this way you will have a LOT of lees. When I...

I want to make great apple wine.

Welcome to WMT. Cider and apple wine are very similar. I believe the only difference is that cider is pressed and fermented apple juice… therefore low ABV. Aplle wine has sugar added to raise the ABV. Either way, go with a mix of apples and add some with astringent qualities. There are...
