    Let the wine continue to clear and sediment (and yeast!) fall out. I would wait and add the sorbate shortly before sweetening, then wait a week and make sure it is not refermenting, then bottle.

    Okay, but this is a specious argument, at a couple of bucks a pop. Sure, if you are fairly convinced (through positive experience) that you have an established "house yeast" in your vineyard or fermenting room, perhaps. But if one is buying grapes from varied sources (most of us do, anyway)...
