    I had the same problem. The challenge with the screen is it doesn't sit on the bottom of tub. I carefully place something between the tank sidewall & the screen. This keeps downward screen pressure on tank bottom. It may get knocked loose during punch downs & valve clogs with seeds. To...

    SC-100A help/advice

    Jim, instructions for my 300 say test should be done under 3 mins. Not sure if a longer titration would cause your outcome. I yank the probe & power off the unit as soon as test is done, this eliminates any second guessing, which I always try to avoid in this hobby.

    I would not mix strains. As long as Brix is 24* or less, the 5 grams of 212 should get it done with proper nutrition.

    Would you consider low ferm temps? Might be catch 22, longer fermentation, but less extraction?

    Fantastic. I had a steel gravity D/C for years that was showing its age. Even with rollers spaced out process was aggressive on stems & grapes, I ordered repair parts through wine makers depot for recently acquired destemmer, they were extremely helpful. Thanks.

    Looks great Crushday. I've had similar spontaneous ferments take off while coming out of cold soaks. Identical temps, different grapes, one starts to kick before the other. Much like yourself I added starter ASAP. I always SO2 @ crush, I guess those wild yeast cell can"t wait to get to work...

    2020 Cab Blend

    Thanks Stickman, I'm looking for larger storage capacity. I like the idea of micro ox which I'm currently lacking in glass. I'm not making small lots of different varieties, primarily 1 or 2 varieties kept solo, sometimes blended. Decisions, decisions..... Thanks for the input.
