    What's in your glass tonight?

I'm enjoying this wine. I opened the bottle last night and it was a little harsh. Today it's delicious.

    bulk purchase of yeast

I tried the Renaissance Andante and Bravo along with Prelude for the 2020 and 2021 seasons and I feel like something is missing in those wines when compared to the previous years' D-254/D80 fermented Cab Sauvignon. I went back to the classic combination for the 2022 season and I think this is...

20 L Barrels Out of Stock in USA!

Have you tried Gibbs Bros. Cooperage? Store Front | Mysite I always call them directly before I order, to make sure they have in stock what I want. They usually ship what I buy in a couple of days. I've had good experience with their barrels and I like the flavor Arkansas oak imparts to my wine.

    Clear versus green/brown wine bottles

I read through this thread and it peaked my curiosity about how much UV protection different colored bottles provide to wine. I found this article which seems to address most aspects of the light damage issue: Wine Bottles: The Importance of Glass Color for Wine - Gravity Wine House I gather...

Homemade vs. Commercial and what I am doing to close the gap

I totally agree with the above @NorCal statement. I also feel that another line item should be added to the list, specifically co-inoculation of MLF bacteria for big reds. I tried it for the first time this year on some Lodi CS grapes and found that, along with controlling the fermenters'...

    mouse in vinegar

This is not a matter of unknowingly ingesting something and finding out later. The fact is @josephenoch found a dead mouse in his vinegar and he posted pictures to prove it. The question that only he can answer still stands: Would he ingest the vinegar KNOWING that he found a dead mouse in it?

    mouse in vinegar

To me, this would be a simple matter to solve. All it would take is to answer the following question honestly: Would I ingest the vinegar myself knowing that I found a dead mouse in it? I can't speak for anyone else, but for me that answer would be an absolute "NO".

Using dried elderflower - when and how to add

Could you please post your elderflower wine recipe?... I'm thinking of making a batch during the holidays when I have a few days off work. I already purchased a 16oz bag of dried "European" elderflower from Frontier Co-Op an Amazon and I'm looking for a good recipe. If, for some reason you...

Those who ferment in a large vat with spigot

The trick to that is to have a large enough spigot/valve to allow the grape skins to pass through without clogging the opening. That minimum opening is 1". I've tried 3/4" and it didn't work as well. I've got 3 of these fermenters sitting on a bench I made for my wine room, about 20" off the...

    Bottle Shock?

I truly thank everyone for their comments. Yes, I questioned my ability to taste and smell, but all other things taste and smell normal to me, so that's not it. I also asked my wife and one of her friends to taste the wine and they came to the same conclusion. I did a side by side comparison...

    Bottle Shock?

Something really weird is happening to a batch of Merlot I bottled about a month ago. I made this wine from grapes in the fall of 2020 and was aged for a year with about 3 months of that year being in a barrel. The wine I bottled was well balanced, with good structure and mouthfeel, still fruity...

    synthetic corks

They went straight from the bag into the bottles using a Portuguese floor corker with plastic jaws. I even dried the inside of the bottle necks before inserting the corks. The only thing that could maybe explain these failures is that the Nomacorcs were bought last year, but the bag (L.D.Carlson...
