    What's for Dinner?

Pork butt got up to 155*F yesterday before I pulled/wrapped/cooled so I could go out to dinner (rare event). Fortunately got in the mid 20s around here last night. Popped it in the crock pot on low, right now on "warm" since it hit 205 and is basting in it's juices (aka pork fat). Making a...

    What R you doing today?

You need something to wash down lunch.... 9 am is an officially okay start time if you're cooking bacon at the cabin. 11 am at home if it's a day off.

    What's for Dinner?

Not for dinner tonight. Will smoke cook for 4-5 hours today, cool over night, finish off tomorrow. I would have done the whole thing to day but we are planning to go out for my BIL b-day dinner at a restaurant up on the river. Normally a nice view of the State Capital and the river...

    What R you doing today?

Garden planning day. Time to start tomatoes/peppers in my neck of the woods. I normally don't transplant in the garden until May 15th as we normally will have a frost right around that time. Peppers at the end of the month since they need warmer soil conditions or they'll just sit there and not...

    What's for Dinner?

Pork chops on fire sale, so cubed some and soaked in some soy sauce. Made and cooled some jasmine rice. Easy peasy meal that my kids like, wife can chow down once she gets home from a long day at work (works 1 1/2 shifts on Monday and Friday). Gluten free and yum!

    What's for Dinner?

Cold day, needed to warm up the kitchen. Enchilada casserole, beef base, lot's of cheese, corn tortillas as a base and on top (sorta like a Mexican lasagna). Didn't make it really spicy, but I think this dish could handle a ton more of the warmer varieties of peppers. Can't post the recipe I...

    What's for Dinner?

How long does it ferment? Usually that determines the final flavor, more time = more flavor, to a point. Adding some sourdough discard adds a decent amount of flavor if you want a same day or next day dough.

    What's for Dinner?

When I use the snake method in the Weber kettle for a pork butt, I place 3 or 4 chunks of wood on the part of the snake that burns earliest. So I guess my answer is for a couple of hours max. You could probably smoke a pork butt a long time since it is a pretty bland cut for the most part. But...

What are you listening to tonight...

Put a candle in the window... (just be careful if you have little kids around) No internet searching...so hard to find a lyric that doesn't pop right up. Them google guys must be earning their keep. Hint: a California based band that you would have thought was based in Cajun cuntry...

    What's for Dinner?

Tonight's experiment, a same day pan pizza dough to make a Grandma like pie, though I don't prefer the thick and bready crusts of Detroit, Chicago and Sicilian pizzas. Made this one with a much thinner crust, sliced cheese on the bottom, sauce and pecorino romano to finish. One of the better...

    What's for Dinner?

Stick burners are fun, but you can't walk away for too long or your fire will start to die down. I use some charcoal to get it going, then start throwing on the logs, normally hickory or mesquite. You can cook a ton of food, but we might have a get together that needs that much food about once...

It was "Farm raised" since I guess they don't need the room for cows.

    What's for Dinner?

I love the pizza oven! Not sure where they come up with 63% hydration, 470 ml water + 100 ml beer / 1000 g dough = 57% hydration...but with a hot quick cook like you are doing, lower hydration is better! (Never mind, just realized they added 60 g of olive oil...never do that so it didn't catch...

    What's for Dinner?

You are correct, I blow through this stuff pretty quickly. Not on sale, but less than $33 for the 50 lb sack from my local restaurant supply store. I pick it up there, so no shipping, saves a ton on shipping costs. My after dinner project was to fill up 2 gallon ziplock bags, they hold around...

    What's for Dinner?

Picked up a bag of hi-gluten flour for future meals. Fun to get it in the house dry with it pouring rain. Of course once I got it in the house it stopped. Will great for long ferment pizza doughs. Monday is a good day to make something off the wall that the "girls" would never eat, since my...
