Using a yeast nutrient is fine. It will feed the yeast and insure a good fermentation. Potassium Metabisulphate and Sodium Metabisulphate are not the same. I use Sodium Metabisulphte to sanitize. Some use 1/4 tsp. in wine to kill wild yeast but risk a sodium taste in the wine. When racking...

To begin with, my experience has been white wines are much more forgiving, easier to make and can be bottled quicker. The longer you store in your carboy, the clearer your wine will be. Having said that you can still make good red wine. Don't get stuck on the instructions. I'm sure your kits...

The commercial wine comment is a good observation. I checked the SG and it hasn’t changed unless the sugar from the commercial wine is hard to detect.

On the subject of degassing. With the 2019 buckets I purchased, I noticed when I went to degass after fermentation was complete, the wine didn’t foam up and I thought that was odd. Should it be added at the time of bottling or before?

    Potassium Sorbate

I've seen conflicting amounts before bottling. As much as 3.75 tsp. per 5 gallons and as little as 2.5 tsp. What is common? Thanks BV
