Welch's wine experiment - 4 different yeasts - results so far

Do a search for jsWordy's Super Sugar Welchs. Great recipe. When we make it we generally use RC-212. We also use a starting gravity of 1.145 and it normally dies off around 1.020 - 1.030. We don't oak it. Have oaked in the past but doesn't lend a lot to this style of wine. It ends up being a...

    DangerDave's Dragon Blood Wine

SuperKleer is your answer. It packs the lees much tighter. That is one of the downfalls of Sparklloid, the "whispies" that appear later in the bottle.

    Cherry Port

No experience with those taster corks. For me, I cork everything with regular #9 corks. I have seen them used at some local wineries but again, no personal experience. I don't trust them for long term storage.

    Cherry Port

Well, too late for this batch but I probably would have just used regular brandy, if you already had the taste you liked. I am sure by adding the cherry brandy it is and will be cherry heavy on the flavor. After re-reading, it sounds like you still have some of the original cherry wine left, if...

    blueberry wine.. dry, or sweet?

I do mine between and off dry and semi sweet. As Arne mentions, it is your wine so make it how you like it. If I know my wife will be drinking some, then I make about a third of it sweet for her. If I had 7 gal. I would be making it 3 gal. off dry SG 1.005. 2 gal. semi sweet SG 1.010 and 2...

    Redhots

@compdoctor I was pretty new to things when making this. Just started making wine 7 months earlier. Don't know that I would change much about it. This is based off of a 2 gal. batch. Notes below are just as written in my journal. Not sure why I didn't add nutrient or if I forgot to write it...

    Redhots

Wow, forgot all about this wine. Let me grab my notes from home tonight and will post my recipe/results tomorrow. I remember it turned out well. We used to put one red hot in the glass while drinking the wine to bump up the cinnamon flavor.

    How to clean nylon bag

I used to rinse/wash very good, to make sure and get all sediment, seeds, etc. out, then hang dry. Did that a few times and said, "no more". I can buy the paint strainer bags at Menards for $3 for a 3 pack. For $1 per bag, I use them and then throw them away.

    New Recipe

Let your hydrometer be the guide. As long as it is moving along as it is, all is well. The closer you get to dry, the slower it will move.
