    Hmm, I have generally found that splash racking (not under vacuum) is beneficial at this point. Getting a little oxygen back in there can ameliorate SO2 problems.

    Pressed skins Next time you do a frozen bucket, save the pressings and freeze them. You can use them to give a bit more structure and depth to cheap wine kits. Granted a lot of good stuff is gone after pressing, but there is still some there. Avoid the seeds if you can.
