    Help improving taste

Drinking a red early never is a good idea. A number of things are working against you when doing this. Some folks have a sensitivity to "kit wine taste" on reds. I'm one of them. Spent years trying to identify what caused this as have others. No clear answer but most believe it has...

    Metallic Taste in all Reds?

Ha Ha... I've done the same thing and she catches me every time.

    Metallic Taste in all Reds?

I gather most folks out there don't taste it or they wouldn't be selling kit wines. I do know my wife and I taste it. I've only encountered this taste in one commercial wine one time. Trust me. I wish it wasn't there because I do enjoy wine making. Unfortunately, we can tell the difference...

    Metallic Taste in all Reds?

I wouldn't place too much thought on my grape skins comment. I threw that out there because it was the only thing unique to my red wine efforts that I could identify and had not tested. I'm certain there are things I couldn't observe which may account for this issue. One possibility could be...

    Metallic Taste in all Reds?

I never solved my problem. Degassing isn't the answer unfortunately. I ran experiments applying various levels of degassing with no detectable differences. I tried to focus on the specific differences from my reds and whites with regard to ingredients, additives, and process. I ruled out...

    Metallic Taste in all Reds?

Snowcreek, nothing in my process is different, just the ingredients in the kits. Salcoco, may have a point with the sorbate or other chems. Sorbate is used in the whites as well so I would expect to find the metallic there as well but I don't. Someone mentioned the kit reds are loaded with...

    Metallic Taste in all Reds?

I've been brewing and making wine for about 7 years. Beers are great, white wines are good but, I've never made a good red wine. My reds, mostly from high end kits from various mfg, all exhibit the same metallic taste at some level. They all are clear and bright with good color and have no...

    Total SO2 and sensory limit

There is a new product out there called "the Wand". It's a odd looking spoon which is used to eliminate sulfites in a glass of wine. Have any of you tried one of these? If so, can you describe the effect?

Kits versus wine from crushing grapes

Oh she would. She has no use for my beer but enjoys wine. Truthfully, she hasn't a clue what I've actually spent on this hobby... :i

Kits versus wine from crushing grapes

Appears we tracked down the same path. I still brew because I actually prefer my beer and enjoy the challenge. Thought I'd do the same by making wine. I mean how hard can it be? I have most of the equipment and I can start with a simple kit... right?? :)

Kits versus wine from crushing grapes

Interesting subject. I've been making wine for about 5 years. Because of grape availability primarily, this has been from kits. I've used kits from just about every company out there and learned early on to stay with the premium kits. I observed that virtually every one of the white...

Cellar Craft How Early Do You Notice 'Kit Taste' Aroma

Good idea. Thanks. I have used DAP once or twice but really didn't associate it with the KT issue at that time... but wasn't looking for an association at that point. Now if I just had your friends close by... :h

Cellar Craft How Early Do You Notice 'Kit Taste' Aroma

Geronimo, I've made kits from all of those suppliers plus a few of others. All my reds have this slightly metallic, blood like, pungent taste (poor description but that's the best I can do). It varies in intensity from one wine or another but it's always there at some level, and it's the...

Cellar Craft How Early Do You Notice 'Kit Taste' Aroma

Same here... I've never experienced it with reds made from grapes. KT does seem to decline with time but never really goes totally away. My wife readily identifies it but it doesn't bother her as much. I really don't like it and have been working to understand it without much success I might add.
