    Update: As it turns out, I now have 31.875 pounds of peaches, and 37.5 pounds of pears. ()and for some reason almost 12 pounds of fruit cocktail). I figure I can get away with 5 gallons each of peach and pear. And I'll start at least 1 of them, as soon as I have a primary fermenter available.

    I agree. I've already looked at the nutritional info on every can, and noted the total carbohydrates. Mainly because it also gives me an idea how much additional sugars I may need to have.

    Some of the wine labels here look very professional. On the other hand, most of my wine labels are done on a whim. I recently did a Vieux Chateau du Roi (RJS) wine kit, and as it translates to "old castle of the King" I took a photo of a cross-stitch I did nearly 30 years ago, and went with that.

    Still got a bottle or two laying around (I bottled it in splits). I makes a HELL of a marinade. I will say I had to try a glass, and, well. I wouldn't recommend it as a drinking wine. And yeah, the shed it probably a good idea. It's pretty pungent.

    All very good options. I live in an older home (circa 1927) and am not sure I have the space for a single wall sized space. I may end up building a couple if smaller units.
