    WineXpert Is it still Good

I had an RJ Spagnols Chenin Blanc kit that had a few years on it, not quite like yours though. I used the chemicals, but got new yeast, and smelled the juice before mixing. It still smelled sweet, so I mixed it up and waited. Other than the color being slightly off, there is nothing wrong...

    Up Coming Competition

Thanks for this. Good to see that they have mead categories too. I think I have a mead for every category they offer.

Another new addition to the cellar

In late August, Wine Enthusiast catalog was doing a spend $50 and get a $50 coupon event. I took advantage of it to buy a few things I wanted, and used the $50 coupon to help get a plaque for the cellar. Well it arrived yesterday, and I put it up tonight. I love it.

Almost two years in the making

I told my wife last night that I needed an image of Bacchus/Dionysus in my cellar, and it would go nicely in the bare wall space over the other short bottle cabinet. I thought about a sign to go on the door, but I found a door at the local Home Depot that I really like that is stainable wood...

Almost two years in the making

The picture above the small wine barrel is what the friend gave to me, also the same friend that give me the stickers that I put on the serving tray. By strict definition, it is not a mural, but a wall paper poster. It has some kind of paste on the back of it, and you soak the thing in water...

Almost two years in the making

I bought a one level house Sept. 30, 2009, and that December I started working on turning a room that really is too small to be a bedroom into a wine cellar. It does not have humidity and temperature control other than the standard house heat pump/ac. I have made all the wine and mead in this...

Just put this up in my cellar

Thanks. A friend of my wife's gave that to me when she found out I was turning a room into a wine cellar. She bought it on clearance and never used it.

I just put this up the other day in my cellar.

    Long Term Stability of Whites

Actually I don't think spicing a wine with ginseng would be too far fetched. I use the 7 liter wine kits, such as Island Mist and Spagnols Vino Del Vida lines, to make pyments by adding lots of honey to it. I have spiced several of these during fermentation with things like lemon and orange...

    Bottling while sick?

If JMAO is a mispelling of the acronym for Joe's Ancient Orange Mead, one thing I have found out about this mead is that a bottle warmed up is good for what ails you.

    Bottling while sick?

Letting the mead sit until you feel better is no problem. I don't bottle when sick for no other reason that I don't feel like messing with it.

Chocolate - Use or not ?

Wondering if the chocolate pack is from a WE Chocolate Raspberry port? The guy at my local homebrew store gave me the F-Pack from a WE Island Mist Pomegranate Zinfindale kit because the guy who made the kit did not sanitize his stuff and had spoiled wine. He gave the f-pack back to the store...

    How can I make Jager?

Seems you can take a neutral alcohol, like vodka, and add the spices to it, and get something close in flavor atleast. There are many homemade liqueur recipes using a neutral alcohol for the base and then adding in fruit to soak or spices and herbs. And of course sugar syrup to sweeten as most...

    increase alcohol Island Mist kit

For the Island Mist red wine kits, I love adding honey to those, typically around 9 lbs or so until I get a starting gravity of 1.090. Typically I end up with close to a 7gallon batch by adding the honey. I either use some kind of berry blossom to match the flavor or wildflower honey. Adding...
