    What R you doing today?

    Stirred the elder flower and the Mimosa flower wines this morning. I'll be blending the Mimosa wine with peach wine when they're ready.

    Elderberry Wine

    It's apparently oil-based if oil dissolves it off the walls of your primary. My first guess is it comes from the Berry seeds. I'm going to try using just juice with this year's crop. I will let you all know if the goop thing gets solved. Lynn

    I have had great success using extracts purchased from Midwest brewing. I have used the following: blueberry in blueberry wine, peach in peach and mixed fruit light wine, cranberry in cranberry-pomegranite.     Started 5 gals of blackberry jam wine. Added chopped raisins and prunes last night . Will add some lemon tonight and some pectic enzyme prior to pitching yeast. This is one of my favorites. Can't seem to keep enough on hand.

    I have always loved using the scientific method for backsweetening as you. I go a step further and I test using honey, brown sugar, Caro (adds a touch of vanilla) or Eagle or Oh Boy syrup

    Not at all! The holidays are coming soon and that's the perfect size to give out during parties as party favors. Schnaz them up with nice labels and invest in brightly colored aluminum cap covers.

    "Tea" Wine

    Put some more yeast energizer and nutrient in. Check the sweetness too. If dry, add a can of defrosted lemonade (check label that there's no sorbate in it) and all should be fine.
