    French Bordeaux Style

“Vin de pays” simply means “wine of the country”. That means all the lower quality fruit from that region was co-opped together hence why it is Bordeaux style; it contains all varieties of fruit from that region and not predominantly one strain but they will be Cab Sauv, Merlot, Cab Franc...

    Hard Cider back sweetening

Doesn't it depend on the alcohol tolerance of the yeast? if the alcohol topped out prior to adding more sugar then the yeast cant convert past its tolerance threshold.14% tolerance for this yeast so no matter how much sugar you add it will never get above 14% alcohol.

    Other Tweeking Cheap Kits

Wish Costco in America would sell those kits.

    Other Tweeking Cheap Kits

Thank you, I will look into it. Love your story. I am really a fan of the old world style wines and within my travels to Europe and beyond I make sure to visit different vineyards and regions to learn their flavors.

Thanks for the reply, yes I agree although we do artificially layer our wines with Chestnut tannins and other ingredients like F-packs to add depth and character to our wines so trying to figure out all possibilities and see if anyone has any tips before I go screw up some batches of wine, LOL.

@joeswine and anyone else: looking to impart some “terroir” into some of my wines to give them the old world style flavors. looking for the musty, mineral driven wines, especially Italian leathery, earthy wines. How can I go about this? Thanks in advance

    Kieselsol & Chitosan

Give it time. I always give my wines at least a week (sometimes 2 weeks) to outgas and clarify, I do add them just a few minutes apart. Of course you could skip the Kieselsol and Chitosan and just wait, time is the best way to clear your wine.

    Fermenting Bags

These also are what I use and I have no problems punching down the cap or stirring. Works the same as fermenting in bucket 1 and the transfer to bucket 2 with a strainer bag, just takes out the second bucket transfer. Just pull the bag out and squeeze when done with Primary Fermentation. Bag...

A Program for Home Brew Wine Makers

@Kentuckyhomebrewer Here is some data on different yeasts that might be helpful for the calculations. Let me know if you need higher resolution. As for Holidays; leave em off. I like the app idea so I can get away from multiple notepads and possible spillage and loss of data. With family...

A Program for Home Brew Wine Makers

I would buy and screw the Holidays. I just want a reminder to rack and keep me on track. I could care less if it is a Holiday or not. As for measuring I try to convert to grams and ml as much as possible. A conversion calculator built in would be incredible. Maybe having a self calculating...

    Kit Juice differences

How come some kits contain more juice than others? E.G. Master Vintner® Winemaker's Reserve has 2.6 gallons while Master Vintner Sommelier Select has 4.2 gallons and both make 6 gallons. I understand the cheaper ones that have less juice, you just make 5 gallons instead of 6, like suggested. Is...

Great thank you. Would you describe the nitrogen process you are referring to please? I do understand you switch to a 5 gal sometimes and others you are using a nitrogen layer (vs CO2) to protect the wine
