Started agave wine on Memorial weekend. Used organic light agave. Did a one to one ration on agave and water, added 1/2 cup of lime juice. Started yeast with nutrient, then pitched it 24hrs later. Starting SG was 1.160. Since have added nutrient 2 more times and then added 1 additional yeast...

Day 14 on my Chardonnay, add Chitosan by mistake and then added my 1 packet of Kieselsol😟. Have I completely messed it up? Should I add another packet of Kieselsol tomorrow? Or just leave it alone?

Made a really nice Chardonnay and decided to let it bulk age, 1st time I've done this. Was getting a sample to taste after about a month and forgot to put the bunge back in! I am scared that I have ruined it! It smells fine. Any advice or tips would be appreciated. I don't want to bottle it if...
