    My go-to is Forty Creek whisky, usually with Pepsi, or just on the rocks. Its got a well balanced price and a decent palate.

    I just bought a grape skin pack from the brewers direct in Winnipeg (sergeant ave.) $18 for a 4 kilo box seemed like a pretty good deal to me :) I'm guessing it must be a seasonal thing cause they don't always have them.

    Just have to be careful that the sugar levels are not too high. If they are, the sugar acts as a preservative. Most folks tweak kits by going from 6 gallons to 5 ( according to my rough mental math, about a 20% decrease in size) Going from 5 to 3 should be about 30% (i think?) Might be enough...

    Crystalization in secondary fermentation

    As long as your specific gravity indicates the fermentation has finished. Somewhere in the ballpark of .990 and consistent, stable readings over a few days. Sulphites and "wine diamonds" (tartarate crystals) don't really impact each other.

    how best to store wine during sedimentation?

    My wine room has a few big windows in it, so for long term storage I just pop tee shirts over the carboys. Looks a little funny, but works great!
