I have bottled wine early thinking its "clear" only to come back several months later to enjoy a bottle and WTF there is sediment in the bottom of the bottle. It looks bad when trying to gift a bottle or enjoying with a friend. I rack a minimum of 3 times and pretty much follow what was said...
I have slowly amped up production from 9 gal in winter 2010-11 to 45gal this past winter. I dont see myself making much more than this in 1 year. I can only drink so much and still function. And I give plenty away also
I entered a bottle in a local competition. It finished 3rd overall out of 150+. My grape did not do so well. I did not use all the lemon and used another bag of frozen fruit.
Terry is right on with the amount of fruit per gal. Some fruits like strawberry I have gone to 10 lbs. per gal. An F-pack or concentrates will only help. And Backsweetening is to your liking. With most fruit wines I find it a must but taste as you go and dont over do it.
Started it today. Recipe as follows should be about 1 gal. +
8 grapefruit - fruit only no white part of the peel
the zest of 4 grapefruit about 4 tsps.
about 1.5 lbs of sugar or s.g. 1.080-1.090 (8 hrs after starting I am at 1.084)
3/4 gal of warm water
1/4 tsp tannin
1/2 tsp yeast energizer...

I use 6-7 lbs. It looks really good at about 3 months old. Clearing nicely. Taste is weak but ok. If doing over I maybe would of used 10lbs. One thing I was told was not to press the bag of fruit very much as this would bring in to much starch and it would never clear. I did not...
Thanks all. I am following the directions on this one. I wouldnt even have it if I hadnt won it as I have already made to much fruit wine this last fall and winter according to my other half. I dont want to screw it up I can do that with the fruit in the garden.
