    Walker's Marechal Foch

    I have a stuck fermantation. Gravity hasn't changed yet, no fermentation has been noticeable at all. Pitched the yeast twice, added nutrient and energizer. Temperature is in the high 70's. Any suggestions? Pitch a 3rd time with red star?

    I'm using the whip for degassing. I know the easy answer is to use it till the gas taste is out. Curious if there's a rule of thumb for the amount of whipping to do, or is it a several time job.

    yep 1/4 teaspoon per 6 gallons, or 5 camden tablets for 5 gallons.

    I'm finding that i'm getting a K-meta taste in some of my wines. Does it just need to be degassed? Or am I using k-meta too much? (every wracking)

    Definately did not use bleach. :) So if I increase the heat, do I ad a 4th packet of yeast? I've used montrachet so far.

    If I have 40lbs of cranberries, can I use all of them for a 6gallon batch, and use less water and sugar?

    Apple Juice

    Thanks for the help. I was noticing at the grocery store most of the juices are juice plus ascorbic acid. Some are "from Concentrate" plus the acid. I saw this on apple, and cranberry juices. Are these just fine to make wine from? Because for less than $20 I can get 6 gallons of this apple...

    Found an orchard here that sells "pure" apple juice. They say all they add to it is asorbic acid. Is this usable for apple wine? they sell it for only $3 a gallon,if you bring your own jug.

    Peach Problem

    Mine's really clear already so I think i'm going to just rack, stabilize and Fpack. See where that gets me. Part of me is now wondering if the old style air lock is what's giving off the rubber smell. The wine still isn't very sweet to taste though.
