I did the same thing with topping off with a little bit of water when racked to second fermentation. I bottled my very first round of pineapple wine today and the ABV landed at 11.29%. I did end up back sweeting with 75 ml of pineapple juice in each bottle, it was a little too dry for my taste...
Thank you everyone for all the great feed back! I did a total of 16 lbs of fruit so that should be 3.2 pounds of fruit per gallon. On my way to the brew supply store right now. After I get back I’ll read everyone’s suggestions in detail. Thank you again!
