Have the bottles in the fridge for now. I might try and pop the corks and put in champagne bottles with beer caps. Wonder how much of the carbonation I would lose doing that but figure its worth a try.

I have not tested the pH or the TA. I did add a lot of water and sugar pre-ferment but did not add calcium carbonate to lower the acid. I have not added any sorbate or stabilizers yet. Just a guess but I think the pH is likely around 3.0 and the TA around 1.0+. I plan to add potassium...

I bottled the symphony a couple weeks ago. A bit young but tasty. Has good acidity and tropical aroma and flavor. Would make this again for sure. Temps will in the 80s and 90s here for another month so I will be downing a few more bottles while they are young. Won't be able to keep my hands off it.
