    My 2010 Blackberry

    You are going to love how the color changes over time. Mine is only a month and a half old but it is dark black purple and clearing nicely. Ill be gassing it tomorrow with the foodsaver. Blackberry smells so awesome!

    Finally!

    Blackberries was at 5# per gal and Peach was 6# per gal. Same yeast. Temps may have been different by 5 degrees.

    Ok, Im on my second batch ever right now. The first was blackberry and now the second is peach. I noticed with the blackberry that it made the whole house smell like yeast in a major way. No berry smell. Now with the Peach the smell is very low and I can actually smell a little peach in it...

    I got the peaches destoned and ready for wine, Yep! I think the ferment is more active faster than my blackberry. Maybe its because it is warmer this time around in the house than last time. Oh and I ordered up some one gallon carboys too. Now I can keep the overfill for rackings!

    29# Peaches 5Gal water 12# sugar 6 Cambden Tabs 6Tsp Yeast Nutrient 9 Tsp acid blend 1.5 Tsp Tannin 3 Tsp Pectic 1 pack 1116 Yeast. I didnt like the idea of cooking the peaches first so I crushed them all and managed to fit them in one nylon bag. Tested the SG at 1.090. 24 hours...

    Racked off the lees. There where not too many and the wine in the tubes looked very clear. Added 6 Cambden Tabs and sorbate. Ill leave this batch in the closet for a couple months now before I Rack again. I also got some un drilled bungs so I can drill them my size for my food saver so I can degass.
