    Do you use campden tablets in the 1st 24 hours? I didn't see that ingredient in the standard recipe... I'm trying my first one only orange, mango, pineapple juice instead of any lemon juice. Should I have campden in there?

    Its definitely plenty dry.. this makes so much more sense now. Thank you all so much! I decided to try to stop the fermentation now, so I can relax! I added the k-meta and sorbate and tomorrow I'll add a few tablespoons of white wine on top to make it just right in the carboy, then on the back...

    I used 4 c sugar in 2 c water (2:1) in an almost full 5 gallon carboy. Can I use Potassium Metabisulfite and Potassium Sorbate now or just have to wait? I just retested it and the SG is at .994, so it went up a smidge. What am I looking for as I wait - for the SG to come back to .990 or lower...

    I racked mine over and it looks a lot cleaner, but even with keeping every bit of wine off the lees that I could, and adding some glass stones, there is too much space at the top in my 5 gallon carboy. So, if it is too stable to be adding sugar water to it and have it restart fermentation...
