    Thanks guys! It was a fantastic one. The tasting menu and the accompanying wines were great! Who knew that a very rich truffle soup can turn a viognier to taste like caramel! Quite interesting to say the least.

    We've got an early spring here so far. Everything is 2 to 3 weeks earlier. Hopefully this makes up for last year where it was the coldest spring on record, and everything was 3 to 4 weeks late. Harvest was pathetic.

    Chitosan contains absolutely no trace of shellfish proteins, which is the allergen. People with shellfish allergies canliterallydrink the stuff if they wanted to with no effect other than gagging on the thickness of it.

    Vitality Foodservice Canada. That's who Nestle bought, and CC was part of Vitality. It's sad to see them leave the province. I'm not sure they will continue to source those grapes, but possibly RJS could get a few really good employees out of the move, as well as Winexpert.
