  • Sorry I never see these private messages on this forum cause they keep them hidden on the side, others notify you with a big screen right up in your face. I ferment red at warmer temps and all my white and fruit wines much cooler and sometimes go into the lower 50's with these. I just fermented a Chenin Blanc at 52* for 2.25 months in the coolest spot in my basement and the flavor profile is tunning even for this wine.
