    Extended fermentation for peach?

Thanks, Yes, that is what I decided to do. SG was 0.998 racked/pressed, moved into a carboy. Good point about the skins, and the bitterness I had not considered that.

    Extended fermentation for peach?

I left skins on. They were bought fresh, waited to completely ripen, destoned, cutup, froze until I started fermentation.

    Extended fermentation for peach?

Thanks, I installed fermentation lock at appr. 1.020. I was ready to transfer to a carboy today but began to wonder if waiting would help. I will stay on my original plan and move over to the carboy today.

    Extended fermentation for peach?

I started a batch of peach with 30lbs of peaches 7 days ago. Starting SG 1.096, current SG 1.000. Any benefit to extended maceration or should it be transferred to a secondary fermenter at this point?

We served 21 bottles of our wine including the last 4 bottles of 2020 Amarone. Of the 4 varieties we served, the most compliments were about the Amarone. Yesterday I...

    label your wine

I have some of the original flap bungs, I like them I just bought a couple of these. If I fill the carboy to my normal headspace the red tip is in the wine. Is the tip supposed to be in the wine? Looks like it needs to shortened to above wine level?

How much do you engage others?

I have been producing wine since 1979, by myself. In 2000 I moved to a and invited some friends to help with bottling. They all left that evening saying they wanted to make their own batches. I told them to sober up and think it over. Fast forward 20+ years, and these 4 guys are still involved...

    Naming your wine idea!

Sometimes I use the grape name but like to play with names, including music references. Ravishing Ruby (Tom T Hall) Italian Blend. Spanish Moon (Little Feat) Spanish Blend Recently I made a FWK Bourdeaux, and decided on "French Pretender"
