    I have a batch of Fontenac wine started. I have used my acid test kit. It took 10cc to make the wine change color. So, what do I have. 10% acidity in my wine, and I will have to add quite a bit of acid blend to get it to 65%. I am missing something here, and it isn't just my brains...

    Hmmm. It is on it's second day of fermentation. Looks good so far. I have fresh basil, but I think I will refrigerate this and add it after the sugars are fermented out. Really wish I had not made five gallons to begin with. But will certainly keep you posted.:n

    Ok, I am making a red tomatoe wine. After reading your posts on tomatoe wine, I guess I should have made green tomatoe instead of red. But the deed is done. My question. When it is finished, could I add Bloody Mary mix to it? I am looking for a non-sweet V8 flavor.:bt

    I actually did just about that. But, if this had been a red wine I would not have been able to see the lees. Is there a better clarifier for a red??, something that sets up more firmly? Right now, other than racking, I do not attempt to clarify my reds.

    Thanks. I was hopeing it was just a matter of taste and not something that would stop the fermentation. I think I can adjust the taste in the end.
