I have noticed in your tweeks citrus zest
What I added was filleted Orange skins (pulp cut off like filleting a fish) makes for easier racking.
For what it's worth, I appreciate you not acting like a wine expert BLOWHARD,as many are.
May do a Sauvignon Blanc with Orange skins.
DB wine makers,. I am new. Doing 5gal.batch..frozen strawberry, pineapple, White grape concentrate, strawberry jam and preserves.Brown sugar sweetened.
Taste is good.
My thinking was the molasses back notes with sweetness... I am in full experiment mode.. being the Sauvignon Blanc is O2 sick.. added orange zest.

A update on my over worked S.Blanc.
Added 2 Tbls. Of Dunkin coffee beans..
And one cup of Brown sugar simple syrup.
Surprised, it's sour taste is faded and caramel notes with a floral backdrop,(if that translates!).
Help is needed.
I tasted my Fontana Sblanc. It's perfectly clear.
However, tastes very acid,ph3.2, though.
Little vinagarie,... but drinkable.
Body is light.
Is it ruined?
That's my experience also. Plenty of room to stir and can have a lid with a bubble application.
Use 5 gallon plastic jugs as well with handle and screw tight lid. Easy cleanings and non breakable.
Works...$6 each.
