    Waldo! That is awesome.

    Back Sweetening

    Thanks.

    Green Tomato Wine

I'd caution using all of it - everything I've heard about this wine is that it takes time to mellow out. I've had more than one batch of other wines that I thought were only good for cooking, but then a year or two later realized (when I only had a bottle or two left) that they had become...

    Peach Cider Wine Recipe

I have not added and do not plan to add any cinnamon... The wine is clearing nicely but I haven't tasted it recently. I'll definitely add more pics as it comes along - it smelled great while it was fermenting so I'm hopeful this one will be really tasty.

    Back Sweetening

If you have a wine that is really done (like aged 6 months or more after fermentation is complete) do you really have to let it sit again after you backsweeten it or can you just sweeten it and bottle the same day (as long as you add K-meta and sorbate)?

    AHA Mead Day 2010

Vcasey - those all look amazing and I love the stick blender idea. Thanks & happy mead day! :)

    Corn Sugar

Corn sugar can be purchased at homebrewing stores - we use it to carbonate the beer when bottling and it is not expensive. Since corn sugar is in a dry form, by substituting corn syrup you are adding more liquid to your Apfelwine. I'm not sure if it makes that much of a difference in terms of...

    Peach Cider Wine Recipe

Thanks. With the overall flavor of this particular peach cider I'm not sure I'll be adding any spice to it but it's good to know that the sticks are the way to go when adding cinnamon. Fall apple harvest, here I come...

    Peach Cider Wine Recipe

Fermentation is in high gear now and it smells delicious. I've never tried adding cinnamon to wine. Did you use a cinnamon stick or add powder? I would have guessed that simmering a cinnamon stick in just a bit of water (until it unfolds itself), letting it cool and then adding the whole bit to...

    Peach Cider Wine Recipe

P.S. I couldn't get a starting SG because my hydrometer was too long.

    Peach Cider Wine Recipe

I could not resist a gallon of peach cider the other day (especially since it was being sold in a reusable glass jug), but I couldn't find a recipe for peach cider wine so I put one together. I'm guessing there's no recipe because peach cider is so often made with cane sugar and additives (as in...

    2011 National Mead Day

That sparkling ginger mead was my first mead (it is adapted from Papazian's book, "Homebrewed Adventures") and I'd recommend giving it a try using less ginger (the original recipe is only 2oz rather than 52 - yikes, that seems like a lot of ginger). Either way though, the ginger flavor mellows...

ARGH. Need to clean a malt extract spill...

Mess is GONE. This is what I have learned: 1) use liquid extract sooner and/or monitor for leakage 2) plastic drywall scrapers work GREAT for getting up the big glops 3) setting extract-coated things in the hot sun really loosens up the extract for easier clean-up 4) hot soapy water (the...

ARGH. Need to clean a malt extract spill...

Yes, it is awful and you were right about the hot water. I did figure out that drywall scrapers (the cheap plastic kind, not the metal ones) are great for scraping the largest parts off - I am using that first and then going back over it all with hot, soapy water. Seems to be working... just...
