    Far-flung classic car sale tale that's all in the family

    nice story, my brother and I have my grandparents 63 Impala with 55,000 orig. miles on it. right now its at the body shop getting restored. is sat in Las Vegas for most of its life, shop guys are amazed at how little rust is on it making it a pretty easy job to get it back together.

    The eclipse kits are good on their own, no tweeking really needed. I agree with Brian55, skip the chitosan and sorbate.

    pectic enzyme

    I know you can get pectin at the grocery store, but I don't think the enzyme. Pectin is used in jelly making, it makes it jell. Pectic enzyme does the opposite, it breaks down the pectin, hence enzyme, giving more juice. we sell it by the ounce and the pound. here is a link...

    Hops

    Have a friend that grows his own hops, I asked the question of alpha and bittering. he said if its low alpha its a Pale ale, if its hoppy then we'll call it an IPA. So naming the beer after its made and not before.:slp

    WineXpert Selection International Spanish Tempranillo w Grape Skins

    As this is your first kit, I would just follow the directions ( leave out the sorbate, why they even ship it with reds is beyond me). I seldom tweek kits, but as I try one and find something i would like to change then I do it on the next kit. BTW, its shipping today!

    not sure, still pretty low, the whole F-pack may increase it only 1-2%.

    Crystals at the bottom of carboy

    one way to drop them out is to cold stabilze by putting them in fridge at 28-32*F for about 30 days, rack as soon as you take it out and bottle.

    WineXpert How old is too old

    I have made kits that have been 1 1/2 years out of date with no problems, those were reds. whites i would think a year before they turn dark. BTW, we will be having a sale on OD kits, nothing more than 6 months out. should be posting later this week or early next....lots of web time involved.

    Japanese beetles

    On the other hand, leave them be, no need to trim leaves to ripen grapes. they do it for you. :)

    Other Dry Rose Kit

    we have make a number of dry Rose and Dry white zinfandels. we add the whole f-pack at the beginning and ferment to dry. too much flavor in the f-pack to leave it out. if you want it off dry, save some for the end after stabilzing.
