How long did you bulk age the Eclipse Merlot for? I have a batch at about 9 months now, and its WAYYYY to acidic.
For comparison a Barolo Meglioli kit which I started at the same time is ready to drink now (although I'm going to bulk age it at least 4 more months).
My F-pac not mixing well on CC Cab Franc Ice Wine Kit, when I racked it today I noticed a thick clear syrup at the bottom of the carboy.
Is there a way to fix this?
While racking my wine today, I noticed a bunch of crystals at the bottom of the carboy, mixed in with the sediment.

How long does K-meta last?
I have some that's over a year old. When I shake and smell the bottle I can smell the sulphur but its not very strong.
Can this still be used for stabilizing?

I've done a Wine Experts Vidal Ice Wine kit which was good, but had too strong of apple taste.
