Went up to door county WI last week and found 25#s of frozen and pitted cherries for $43, a good deal considering they lost 80% of their crop this year. I thawed and pressed the cherries and got a little more than 2 gallons of juice. I made my press a few weeks ago and it worked great. I also made a grinder in anticipation of pear season.
I added 2 gallons of water to the cherry juice and the cherries are in a strainer bag. I added some american oak and 1 fresh vanilla bean. I'm using Lalvin D-254 yeast, I think it gives more body and flavor( from very limited experience). After adding water the SG was 1030 and the PH was 3.7. Next year I'm going to use straight juice if the price comes down to normal.
The orchard i found sells pears, apples and plums for 50 cents a pound. This year half their pear crop was hit by hail so the pears are lumpy and will be sold much cheaper.
