Kit Wine Experiment - Malolactic Fermentation (MLF) Part 1

Does the man-made malic acid make the wine have a tart after-taste?

Kit Wine Experiment - Malolactic Fermentation (MLF) Part 1

Looking forward to your results. I have completed several red wine kits that have a tart after-taste. I am wondering if MLF would help. One currently has a PH of 3.27, so a bit on the acidic side. I am going to correct to 3.5 - 3.6 PH using a sample to see if that solves the problem. Good...

Question about vacuum pump and "Big Mouth Bubbler"

It is not likely that a glass carboy will implode under vacuum. Thin-walled glass vessels such as mason jars do not implode under vacuum, and they have large mouths. If you are concerned, do a test using water first.

Grapevine needs help to survive :(

Looks similar to powdery mildew which is a fungus, and fungi thrive in wet conditions especially if air flow is poor which keeps moisture on the plants. If it is fungus, you can treat with neem oil. Just follow directions on container. I had a bad case in my vegetable patch, and neem oil did...

    Damn, broke a carboy today

Must be going around. I dropped a 6-gallon glass carboy just as I was placing it on a stand to dry after cleaning; it was really slippery and it got away from me. I made a mistake that I want to share. As the carboy was falling, I instinctively tried to catch it. However, it broke while I had my...

Thanks Fred. I feel much better regarding my first attempt at winemaking. I just racked my 2nd batch, added kmeta, installed bung and airlock, and set it aside to age.

I like dry red wines; I am not a fan of anything sweet. I am starting with kits to educate myself. I plan to move up to skins and then to grapes. I will accumulate equipment as I progress. Speaking of equipment, do you use any equipment like the Blichmann WineEasy? As I age, I look for easier...

Use of oak chips in making Cabernet Sauvignon

Daniel, I am not experienced enough to really help you, but no, do not discard the juice. You have chosen to start with a kit that includes skins. The process and equipment is somewhat different than using a juice only kit which is what I started with. The difference is that with skins you...

I am using a kit wine that includes fermentation, secondary fermentation, degassing, stabilizing, and clearing. I followed the instructions all the way through to bottling only to find that I still had a large amount of gas present. I have been trying to get rid of it ever since. I was lucky...
