    Pressing Fruit

Hey, I have a 5 Gal batch of peach wine going now. I had just got my press so I used it on this batch. The peaches were not too overly ripe so I did not get alot of juice. But so far, so good.

Peach wine - what do I do now?

I have noticed that if you don't mix the pot sorbate so that it is completly dissolved it will cause a haze when you add it back to the batch. And it can be a pain to get dissolved. I usually take a small portion of wine from the batch and put in a small pot on stove then add pot sorbate and...

    What the heck is that?!?

I had that happen with my muscadine last year. What I gathered was that is tartric acid or "wine crystals" as previously mentioned. The way I understand it is, those crystals actually form from an excess in acid and will make your wine better. I am no expert in the subject so I could be...

    Storage

I have noticed at my local winery he stores his wine upside down in the boxes the bottles come in. I'm am not sure if he plans to store them like this long term. Have you ever heard if this could be bad for it? I ask becouse my wine cooler is full and I just bottled 10 gallons so I was...

    Back sweeten and f-pac

I usually sweeten after about 3.5-4 months then after a week or two I bottle. I usually started drinking my wine as soon as I bottle it. My wine is usually very good at 4 months but it only gets better with time although it may never reach one year.

    Blackberry quit working too early

If it was warm in your carport then that can really speed up your fermentation and actually finish quite quickly. Did you check your SG?

Another Newb question: Why juice kits?

I kind of feel the same way about kits but like everyone has said, it is very hard to get the grapes you want during all seasons and so on. I have never used a kit before. I find that I get great satisfaction from actually breaking a sweat. I like to make friut wines so most of the time I pick...

    pot sorbate

hhhhewww. That is a relief to hear. I normally wait about 2 weeks after I sweeten it to bottle. But I had a good bit of head space and I didn't want to water it down any with topping it up. Which leds to another question: Would that headspace do any harm for about a week even after I have...

Hey guys, I'm not sure if I have a major brain fart today or what but I am questioning myself here. I just bottled 5 gallons of beautiful blueberry wine today. Here is my problem.... yesterday I racked it, added 5 campden tablets, added 1/4 teaspoon pot sorbate per gallon (as the label...

    Flavor packing a Blackberry wine

You should add sorbate before sweetening it. I love making blackberry wine. I have never used a flavor pack or added cans of blackberries after I fermented it,I have used a sugar syrup. What I have noticed with my blackberry wines is that the blackberry taste really comes out after I sweeten...
