Anybody ever add skins without the bags? Would it matter other than clean up?

I'm a private pilot flight instructor. We always say "You have to learn from the mistakes of others. You won't live long enough to make them all yourself." Thanks to all for sharing their experiments and experiences. This is a great group.

I started a Bordeaux early November. I plan on bottling early February. Wondering when others consider the 1 year aging recommended by FWK, 1 year from the FWK instructions( 6-8 weeks) or 1 year from bottling (4 months)? Just racked last night and it is really good.

Yes That is the jack. The drill is a 3/8 battery powered but 1/2 would be better. Going up with a full carboy/fermenter sometimes get wobbly so I steady the carboy/fermenter with my left hand while raising. I did not use the casters but that's not a bad ideal. I'll have to look for them...

I'm doing a Cab and a Merlot. Punched down grape skin bags per instructions in both. Snapped down lids and waited for day 14. Cab bags wound up on the bottom. Merlot bags were still floating. Anybody find the same? And does it even matter?

    Wine work bench

Thanks. I started with a vacuum pump for degassing. Added a bottle filler. Then I met DangerDave on the Appalachian Trail and he told me about All In One Wine Pump. The various bungs I bought from them.

    Wine work bench

I made this using a transmission jack from Harbor Freight. I use a cordless drill to raise and lower to counter height.
