Do you need to use Potassium Sorbate?

I plan on back sweetening a couple gallons of wine I am ready to bottle. I would like to know the amount of potassium sorbate per gallon recommended prior to adding sugar. I believe I am suppose to wait 24 hrs before adding sugar. I will be racking my 3 gal. carboy into 1 gal. jugs prior to...

Why are my corks pushing up?

When I go to bottle my 3 gal. carboy of wine, I plan on sweetening it prior to bottling. My intension was to rack the wine into a clean 5 gal bucket, add sugar to taste, then bottle. Will the racking into the bucket and stiring in the sugar help degassing? I fear that using a wand to stir the...

Why are my corks pushing up?

Thanks for the replies back. I am using #8 corks. The book I've been using as a guide mentioned to allow 1 cm of air space between the wine and cork, so even 1/4" is less than that. I have another 3 gal. carboy of wine to bottle still, so I think I'll not soak the corks this time, and also...

Why are my corks pushing up?

Two days ago I corked 4 bottles of wine from a 1 gal. carboy. The corks kept pushing back up over 1/4" after pushing them in the bottles several times. I know my wine is very stable. The SG hasn't changed the last ten months after three rackings. I soaked the new corks in a sulphite solution...

    Back Sweetening question

I am ready to bottle my first batch of wine. Last fall I started a batch of wild grape wine from grapes I picked near my home. The wine has been ageing in a 3 gal. & 1 gal carboy. I have racked three times since last November, and the SG has measured at 0.992 each time I racked. I bottled...

    Racking questions

I racked my 4 gallons of wine today. The SG tested at 0.992, which is the same as it was in January and November. I did an acid test, and I came up with between 7 & 8 % acidity. I tested after adding 4 crushed campdon tablets. I hope that wasn't a mistake. The wine is very clear and...

    Racking questions

Thanks Bill for the reply back. It sounds like I shouldn't be having any oxidation problems with my racking into a bucket. I believe I will rack one more time and then bulk age the wine in the carboys a few more months before bottling. You mentioned adding k-meta into the carboys. I'm not...

    Racking questions

I'm 6 months into my first wine making batch of 4 gallons of wild grape wine. Before I present my questions, I'll give a rundown of my wine receipe I came up with. In early October I picked 21 lbs of stemmed wild grapes. I don't know what kind, but they were fairly large, almost black, and...

    Can you cork beer bottles?

It does twist off just like the original twist cap. It is tight enough that I can't twist it off with my bare hand. (Don't have the grip I use to have I guess), but with a shirt tail or rag, I can twist it off. It also seems to twist back closed. Lamar

    Can you cork beer bottles?

I tried my bottle capper on a Bud Light Platinum twist-off bottle with some water in it, and it seems to be held on good as far as I can tell. No leakage and is very tight. Lamar

    Can you cork beer bottles?

This thread is of great interest to me. I like the idea of producing smaller bottles of wine, which I can use as gifts during the holiday. I have been saving several dozen empty bottles of Bud Light Platinum because of the beautiful cobalt blue color. These bottles used screw off caps. Could...
