    Thanks Steve, that's the kind of input I was looking for. I bought a few packs of the #2s to start with. Do you see any problem in using these on my merlot? I don't want to "strip" the wine, just get the "floaties" and the "smoke" out.

    High Alcohol? Your Choice

    I had read that it's better to let the primary fermentation take off then feed the additional sugar in over a few days. That was what I was thinking about doing. That way I can keep an eye on the SG and not add anything that won't be converted. Does that make sense?

    Cleanpro SDH

    I suppose this has already been covered elsewhere, but who would you suggest ordering from? There are no stores in my area, so everything is done on the internet.

    High Alcohol? Your Choice

    The kit I'm using is from Niagra Mist and has a strawberry flavor pack. So I was thinking that if I boosted the alcohol content before adding the flavor pack, the strawberry flavor should still come through. Or am I thinking about this all wrong? Right now I'm in the third day of fermentation...

    OxyClean?

    Dave, Yeah I agree that it's a great cleaner, but it sounds like I still need to sanitize afterwards. "Dollar Tree"? I thought that was a local store down here.

    Cleanpro SDH

    The kit I got from E.C. Kraus came with a small container of Cleanpro SDH. It looks like they only sell it in these small quanities, does anyone know where I can get it in bulk? Maybe by a different brand name.

    Anyone using Oxyclean on their equipment? Is it suitable as a cleanser for carboys and the like?

    Smurfe, Yeah, sounds like a good idea, Port that is.. I love good port. So are you going to be adding sugar throughout the fermentation then? And are you going to have to use a different kind of yeast to help convert the sugar?

    Egg White? How did we get from milk to egg whites? Anyway, I mixed up a 50/50 solution of good ol' Elmers Glue and milk. We'll see how well the labels stick with that. Why is it that the paper always curls the wrong way when you get it wet before sticking it on the bottle?

    Well, I'd like to get in the 15% range. Of course when the alcohol content supercedes taste does it really matter about fruit wines? I guess really the thing is that I don't know how much strawberry flavor to expect out of the zin kit anyway. So you think a hardy red would be the best way to go...

    So when you're talking about using "milk" are you talking about whole milk or 2%. Does it matter? Yeah I know this is probably a really dumb question, but hey I like 2% and that's what I've got in the fridge!

    Heat gun on shrink caps?

    Have any of you ever used a heat gun on your shrink caps? I've got an electric heat gun I was thinking about trying. (it's like a high temperature blow dryer) Usually use it to shrink sheathing on wiring harnesses.

    Bottle shock: Yeah I have heard that mentioned before, guess I just didn't know what to expect. I mean the wine was pretty decent the day I bottled it, but last night it was just kind of wierd tasting. Guess I better leave it alone for a while and crack open a few bud lights instead.:D
