    EC-1118 and High Temperatures

This is my first time making this particular version, so I'll have to brew another batch to actually compare for off flavors. I kind of like problems like that.

    EC-1118 and High Temperatures

My fermentation area without a heating belt is normally around 65 all day. Everything I read about fermenting lemon juice said keep it between 70 & 80. So I had a heating belt on it and it kept it at a rock solid 76 until fermentation started. Then it just started to heat up. Next time should I...

    EC-1118 and High Temperatures

I did a quick search and didn't find anything. I have a skeeter pee going with a heating belt. Checked it yesterday and it was sitting at 80 Degrees @ 1.072 (from a starting SG of 1.085). I check it again today and it is at 92 Degrees @ 1.032 92 Degrees!! :slp I have unplugged the heating...

    Dragon Blood in 15 days!!!

:slp Somehow i did it again...Yesterday fermentation started and i was at a perfect 80 Degrees sitting @ 1.076. Today I'm at 92 Degrees @ 1.032. I'm at a loss for words :?:? The only good thing is it's in a bucket and didn't spray everywhere. I've unplugged my heating belt so i'm hoping the...

    Dragon Blood in 15 days!!!

I have previously fermented 5G in a 6.5G carboy without any issues. But It was my first time using a brewbelt with EC-1118 & first time using it on a Glass Carboy. It was placed right dead center and had the must steady at around 78 and then fermentation started with a BANG -literally-...

    Easy Peesy

1 more question, I see that we hit 1.085sg before adding the fruit and topping off with water. Will the fruit affect the SG? And what ABV do you normally hit? With a standard recipe? Thanks again sorry for all the questions

    Easy Peesy

I just stumbled upon this thread and I'm really excited to make this. My only question is how do you squeeze the fruit bag? Reach your hand in and squeeze? That doesn't sound very sanitary. I'm thinking of fishing it out and throwing it into another bucket and pressing it with my hand in a...

Do I need to rack to secondary?

From the recipe: I've added the 3rd bottle of lemon, the yeast energizer and the extra yeast nutrient. After that, it started to go CRAZY! Its been 2 days and it is still bubbling away and gravity is currently at 1.015. So my question is, should I let it ferment dry in the primary (a...
