    Balancing Act

    I have 6 gal. batchof White Muscadine started. Acid TA is at 0.47should be at (0.7-0.85+-), pH is at 3.0. Which is more imp. Acid or pH? Will pitch yeast tomorrow. Thanks.

    Sipping Stuff

    I have 5 qts. of steamed blackberry juice just itching to become a sipping wine. Do I follow the Home Winemaking hand book or does someone have a better idea. I would like the ending ABV to be about 18%. Any advise would be appreciated. I will post when done, come over and have a sip. Thanks.

    Whats up with this?

    Berry Time

    Out to lunch

    Well for about 4 weeks I can't do any heavy lifting. I guess that means carboys of wine. I had umbilical hernia surgery yesterday morning. Will be out of action for a little bit.     Strawberry Wine

    WalMart had Strawberries on sale this weekend, 1.50/lb.. Steam juiced 13 lbs, yeild was 7 qts.. Plan on making 3 gals.. Using basic recipe, this should be ok? Any comments. Hoping everyone had a good Easter.

    Springtime

    Bud Break! Today at 5:30 PM I found the first bud in my Muscadines. The Plums beat the Muscadines by 1 week, they are flowering. The blackberrys are greening also. I will be busy real soon.
