    Sulphite taste

    When I began to bulk age my WE Sonoma Cab Crush I added 1/4 tsp of potassium sulfite and have been aging for 6 weeks.     How important is the temp when bulk aging, and what is the best temp to keep your carboys at.

    When to rack

    When bulk aging is it best to rack your wine off the lees when the kit says so then sulphite and top off to begin the aging, or just leave it be and let it age.(sulfiting of course). And if you think it could use more oak can you use oak in bulk aging or is it to late?
