    Racked off the lees into a clean and sanitized 5 gallon carboy and 1 gallon jug - which is about 2/3 full. I topped the jug off with CO2 and gave a little shot of CO2 on top of the wine in the carboy beforesealing with a bung. Not much left to do at this point other than wait 3 years or so...

    back sweeten mead

    JAO will finish sweet - almost cloyingly so - when made exactly as the original recipe describes, including the use of bread yeast. I'm going to guess that your recipe was somewhat altered? - GL63

    Looks like your crossed fingers worked Wade as there is no indication of any external leakage at this point (the barrel has been out of the tub for about 1 1/2 hours now and the surface is starting to dry) - hopefully this issue has been resolved.     Not yet ..... It's sitting in my bathtub now filled with hot water and completely submerged in hot water. I will leave it in for 24 hours, drain it, refill it with hot water and keep an eye on it. Hopefully this will do the trick. If not, I'll call Sandor .... - GL63
