    What is this fruit?

    I have a Fuyu persimmon tree...looks like one in the picture. Mine ripen in November. I pick when they're a beautiful orange color, just before they start to turn soft. Eat like an apple.... delicious! They make the best persimmon jam.... I haven't tried wine yet.

    Dean, Thank you so much for the reply. About how long do you think I should let it sit after racking(2,3 6mo?)and should I use the sorbate and k-meta now or wait 'til the very end? I'm thinking at least the k-meta now.

    Travisty, I made two of the La Bodega Port Kits. I added Christian Bros VSOP to one and E&J VSOP to the other. They are both going to be fantastic! Great choice.

    I might just try that, but I am making one of the kits for someone else. I'll let him decide what he wants to use. I might split mine up into 3 parts and try different things. It will be a real learning experience, and I'm sure I won't have any trouble finding people to come to a tasting party!!

    PWP...thanks for the info......I just ordered 2 LaBodega Ports from George and I think I'll try one with a brandy and one without, just to taste the difference. Should be interesting.

    Jobe.....it is a great book, but I was dissappointed that she didn't have a recipe in there for persimmon wine. I did find one on Georges website and I have a gallon fermenting right now. My first fruit wine.......I'm so excited!
