    Verjuice

Thanks for the reply Peter. Is this just general advice or do you have specific knowledge of making Verjuice. So just to clarify things....I should pick, crush, press and treat as above. Leave in stainless steel until clear and bottle? Suggested PPM of Sulfur on bottling any advice? Once again...

    Verjuice

Hi Next January will have to crop thin my San Giovese Instead of just throwing the grapes on the ground thought about making Verjuice. Has anyone ever made verjuice. Want to bottle it semi commercially. How do you treat it so it won't ferment in the bottle etc. regards

    Wide swings in weather

Just returned from a weeks holiday on a houseboat. Winter Solstice and all that. Was freezing. Woke up the first morning and thought it was pouring with rain until I noted the deck was dry. The water pouring off the trees was the ice melting!!! Eastern States having floods after...

    digging up grape vines

Hi My best suggestion would be to get a couple of bottles of wine or a carton of beer (which ever the bulldozer driver prefers) an old blanket or sleeping bag and a stout rope or chain. Trim vine back so you only have a few buds Rap blanket around the base of the required vine, tie chain...

    Bottle filling

Hi Thanks for the suggestion re name for Rose. Just doing the first racking on my barrels. Only 5 more to go. Always amazes me how the batches made from the same grapes at different times (1 week apart) taste so different. Doing tannin and acid adds as I refill the barrels. Just wish I...

Hi everyone Well good news. ITS RAINING. Just had 8 inches of rain in just over a week and we normally only get 25 inches for the full year. Been constant steady rain no great cloud burst so the ground has been soaking it up like a sponge. The weeds have shot up overnight. Now just...

    Bottle filling

Hi Sorry for the delay in answering but I have been sick for a few days. I used to work in the wine industry in the Barossa Valley and part of the salery package (common for wine industry workers) was a wine allowance. Now to answer your question my wife and I MAY just drink 1 or 2...

They fought the frost, & the frost won

Pity the vineyard was not set up for overhead watering. (a must in frost prone areas) Just leave the 360deg sprinklers on when temperature drops works a treat. Even if the shoots do get covered in ice thaws so slowly as to have minimul damage. only the rapid cooling/heating that does the damage...

    Bottle filling

Just completed bottling about 2800 bottles of Shiraz. this is the 3rd year I have used the enol matic and it is great. The only mistake I made this year was to have the wine a lot higher than the filler. Makes all the seals leak and all the bottles get wet with wine. Put the wine lower than the...
