I have been out of the WMT loop for awhile. People have really been enjoying the wine I have made so far. I've had a request for a strawberry wine. I want to make this from a kit. Any suggestions?? I want something crisp and not too sweet.

Anyone watch Doomsday Preppers?? I just watched an episode where a man is stocking up on homemade wine. He has over 500 bottles in his hidden cellar. He feels that wine will be a good use for trade a bartaring when currency is worthless. Pretty interesting!
Happy Easter! This is my first holiday that I am able to share my wine with friends and family. They love it and wow, it goes fast!!! I need to remember this and stock up for upcoming holidays and gatherings!
Hello! I started 2, 1 gallon batches of Apfelwein this morning. I think I filled the carboys up a little high. The foam is starting to get into the airlock. Should I extract some of the liquid from the carboy or just let it be?

Stabilize
What should I add to stabilize before back-sweetening and how much for 6 gallon carboy? How long should I wait after adding the stabilizing before I sweeten?
I am going to bottle some wine this evening. How far ahead can I sanitize my bottles and equipment? I don't want to sanitize right now if it means I'll have to sanitize again later this evening. Does that make sense?

Hey gang! I have a Lodi Old Vine Zin in secondary fermentation right now. I have bottled a red blend, and an Italian Pinot Girgio. I have a couple Welch's grape juice concentrate wines as well and an Apfelwein.

When should I snap the lid on and put in the airlock in primary fermentation? I have a CC Lodi Old Vine Zin going now. It's on it's 3rd day. I've have the lid sitting in the fermentor with no airlock.

So I bottled my first batch of wine... Well half of it! I bought a 3 gallon carboy and racked half in there for bulk aging. I bottled 13 bottles and we drank another as I bottled. It was a hit!
I soaked my corks but did not need all of them. Will I be able to later use the ones I soaked...

I started a CC Showcase Old Vine Zin with grape pack. What should the starting SG be on this wine? The instruction don't really say. The instructions state that the SG should be 1.00 or less after day 10 when moving to secondary.

I just sampled a little bit of my Welch's grape juice concentrate wine. It has been in the carboy since 1/12/12. WOW, it's strong! The SG is .990. Is there any way to tone this down? It's still has a fizzy taste to it as well.

I degassed and topped off my Vintner's Reserve Italian Pinot Grigio today. The wine has a slight sulfur smell... Doesn't smell good, but tastes pretty good. What do I do about the smell? I read adding campden tablets will help?
