    Raspberry Port?

I was planning on using Lavin 1122. Good idea?

    Raspberry Port?

Would like to make this. I have the Vitner's Harvest can. I plan on only making 3 gallons just like my research here said to so. However, I do have a few questions that I have been unable to reliably answer by sifting through the old threads. The recipe on the back calls for 7 pounds of...

Anyone have a good recipe for this?

    Vinter's Harvest Purees

The smaller cans are used primarily for beer making, so if you never go that way in your lhbs, you may miss them.

    cayuga white juice

    Yep...that's the color.

    cayuga white juice

I tasted this today. I put the wine in a glass, and the color was not that of honey, but of, well, quite frankly, of urine. So too dark for this varietal. I tasted it, but could taste no hint of oxidation. It did seem somewhat out of balance and a bit too acidic, but since it tasted alright...

    cayuga white juice

Thanks folks for the advice, I haven't had to time to open it up and look at it and measure somethings. I did keep it topped up. The picture is of great help, let me get it out of the bulk aging and see what color it appears. I will keep you informed.

    cayuga white juice

I now had had this bulk aging since August. I would like to bottle it now, but looking at it, I am concerned that color is overly dark and it might have gotten some oxygen. How dark should this wine be? It's like the color of honey. Is this just due to the large quantity in the carboy...

    Indiana State Fair Wine Competition

You will not see my judging sheets, as since I am only a student judge, my scores did not count in the official judging. My scores were looked at to ensure they were in line with the other judges, but will not be given to the entrants. It was great though! Like I said, I got ideas for things...

    Indiana State Fair Wine Competition

I was privileged to student judge at this competition yesterday afternoon in the amateur flight for my AWS training. Ended up evaluating around 80 wines by the time I was done. I was extremely impressed with the breadth and quality of the wines I tasted. We noted around 3 with flaws...

    cayuga white juice

No, it's this year's juice. Due to the very mild winter and hot summer, it is ripening way ahead of schedule. It is due to arrive Friday. How long should I plan on having this in the secondary? Thanks for the other suggestions!

    cayuga white juice

Local winery is selling this starting this week. Want to buy 6 gallons. They are selling a lot more types in the next several weeks, but not for at least 3 more weeks. That will be plenty of time for me to get this into the secondary, but I want to make sure I don't overextend myself, as I...

    Replacing Test Sample?

Was told that I should taste the sample every time so that I could taste the evolution of the wine and also (if something goes wrong) learn where in the process the problem is. I don't like wasting it though!

Do you put the bubbler airlock on after sprinking the yeast

Robie, that is why I hate the directions for the kits. They don't explain it well enough for beginners. I put the lid on with an airlock. However, I give it a good stir once daily for the first week or so. It has worked so far. I don't like the idea of leaving something as flimsy as a...
