Just did my second racking on a Reisling. Specific gravity is 9.40 which seems low. From the posts I am seeing that this means the wine will be dry??? We prefer a sweeter wine. How can I correct this?
After waiting the 24 hours to add the yeast nothing was happening so the next day added more yeast and yeast nutrient. Now am seeing fermentation. My question is should I stir the mush again during the rest of the fermentation?
Posted this question in the wrong place once. Here goes again. Racking wine to secondary fermentation vessel, a 5 gallon glass carboy. Should I top of carboy to reduce headspace?
