    Pectic Haze ??

    I have a strawberry wine that I put super kleer into a week ago. About 1/4 inch of sediment but still very cloudy. I'm figuring I need to add pectic enzyme. Should I rack first to get off the sediment from the super kleer or just stir it all up again with the addition of the pectic enzyme?

    Chocolate - Use or not ?

    I was given a sealed bag of chocolate from a port kit that broke open and couldn't be sold. It could be a couple of years old... is it still good?

    How long on the oak?

    I racked and oaked 4 wines today. Muscat, Cabernet Sauvignon, Pinot noir, and Zin Blush. Soooooooo how long should I leave on the oak chips? I put 1 oz of chips in each as per the directions on the package. Light oak in the mascot and french medium in the other three.

    Raisins or Welch's Grape Juice

    I have always added raisins to my wines for body. I have read that you can just use Welch's grape juice instead. Cleaner and easier to use. Jack Keller even said he doesn't use raisins anymore. So what do you think? Will juice give the same body as raisins?

    A friend of mine asked me how long would a fruit wine last? I told him it does get better with age. So how long of a shelf life does fruit wine have? I know grape wines have a longer shelf life? Correct?

    Peach fpac question

    Started a peach wine today. Five lb's of peaches per gallon. I took 20 lb's of peaches and simmered to make a fpac. I wont need the fpac for a week or two. What do I do with the fpac for that time? Refrigerate it? Freeze it?

    Rose Petal Wine Question

    Hi All, I started a rose petal wine on 3-11 (SG 1.090) Racked to secondary 8 days later at 1.040. It has been at that reading for 5 days or so. It shows very little activity in the airlock. How do I get this to ferment out dry?
