This will be my first time making wine from grapes and I would like to know what the standard is for how many pounds of grapes to a gallon of wine. I found a local vineyard that I believe sells minimum of 100# of chardonnay. I will be doing 5 gallon batches.
thanks for the info, went with 3 cans pinot noir in 6 gallons. sugared to 1080, added nutrient and energyzer, and brought the acid up to .65

My 6 gallon chocolate strawberry port is done fermenting. It's degassed and stabalized, secondary ingredients is in. Only time will tell if it's as good as Wades 3 gallon recipe, I still have 2 bottles for the comparison.
I've read several recipes lately and some say to let must set for 12 hours before adding pectic enzyme and some add right from the start. Can I get some thoughts on what some prefer?
