I hae a cool basement as well. I use the brewbelt with every kit, and have never had a problem

I do not believe you need to squeeze the grapeskin bag every day. Push it under daily, and
squeeze it well before racking (to get all the wine out) and you're good to go.

Geek,If you want to top up after racking off the sediment, do so but with a similar wine, not
water. the point of changing the instructions was to stop people from diluting their wines too
