My Vintners reserve Pinot Grigi has gone through primary, secondary, degassing and has been clearing for 14 days now.

I degassed and added the clarifying agents and it is sitting in the carboy, I did a temp check, my pantry is about 69 degrees.
I tasted it and also noticed the aroma - it seemed very strong - does this mellow out with racking and aging?

I just purchased this kit, opened up and see they supply oak "dust" for lack of a better work, has anyone used this or substituted with oak cubes or chips?
