Honestly, I think it all depends on how quickly your fermentation is moving on along. If it is
barely creeping at 1.030 then I would rack it.. However, if it is rolling on along at a good
clip at 1.01...

ack!NO! dont do it!You must wait for it to finish fermenting first, then let it clear out
before you stabalize it else it will not be effective! Only, after that may you add sugar back

Looks like your calculated ABV is close enough for government work. I used (1.120-1.010)*131
