    After the stage is complete for stabilizing and clearing, the next step in my instructions is racking and clarification. It does not say what temperature to keep the wine at for this stage, I am assuming because the fermentation process is done it can be moved to a cooler location?

    Where to start, I make my wine from kits so I am used to aging in the bottle. The kit says minimum 3 months so all I was thinking was doing a 3 month bulk age.
